This Monday treat yourself to an extended weekend mood. This simple, easy and delicious preparation of eggs will perk up your spirits giving you a head start to an energetic work week. Don’t be intimidated by the look of this dish, I promise its easy and can be made in flat 10 minutes. Here’s the recipe and wishing you a wonderful day ahead.

Prep time – 15 mins
Ingredients
- 2 large eggs
- Salt
- 2 to 4 drops of vinegar
- Chilli flakes
- Chives
Mehtod
- Separate the egg whites and yolks carefully
- Pour the egg whites into a stand mixer. If you don’t have one, simply use a dry bowl and an electric hand mixer.
- Add salt and start to whip the egg whites on medium speed.
- Add 2 to 3 drops of vinegar to the egg white midway
- Continue to whip it till if forms soft peaks. This should take about 5 to 7 minutes.
- Scoop out the foamy egg whites on to a lined baking tray.
- Create a small depression in the centre of each could.
- Bake at 200 degrees for 7 mins.
- Next add the egg yolk in the created well sprinkle a little salt and bake it for another 4 mins.
- At this point the egg clouds would have turned blush and the yolk would have set.
- Enjoy this scrumptious breakfast with a slice of warm toast with butter.
Tip
Add a little bit of Pav Bhaji masala powder to give it a twist
