Ingredients
- 1 lt Milk (full fat)
- 200 grams sugar
- Rice- 60 gms (leftover cooked rice)
- Saffron – few strands
- Almonds- 20 gms (finely sliced)
- Pinch of salt
Method
- In a heavy based pot bring the milk to a gentle boil with a slow simmer.
- Add in the cooked leftover rice, sugar and a pinch of salt.
- Cook for about 18 mins till it thickens up.
- Soak few strands of saffron in lukewarm milk (about 1 tablespoon).
- Once the payasam has thicken well add the saffron mix and gently stir.
- Add in the slivered almonds and take if off the heat.
- Over the pan partially and let it cool under the fan.
- Make sure that a milk skin does not form.
- Transfer it into a container and refrigerate overnight.
- This payasam is best served chill.
